A Chat with Jamie

How do you build an iconic coffee shop? Jamie Bellas knows how - and the scary answer? It takes almost 20 years.

Jamie never set out to make a business, a legacy, he simply started Jamie's Espresso in New Farm, Brisbane because he'd returned home from a few years abroad needing work. 

Aside from great coffee in a trendy location Jamie has curated a vibe in his store. It's hard to explain but is a mix of laid back cool, it's unpretentious (toast is served on sheets of baking paper!) and the people who go there seem 'light', carefree.

I really enjoyed interviewing Jamie, he's quite shy but also straight talking and was also kind enough to share his parent's Spinach Pie (Spanakopita) recipe with me. It was brilliant, and a side note: it freezes beautifully.
